Bury has long been known as the black pudding capital of Lancashire, a title earned through centuries of local skill, pride, and unmistakable Northern character. For many, a trip to Bury isn’t complete without the unmistakable aroma of sizzling black pudding drifting through the stalls.

The roots of this tradition stretch back to Ancient Greece, where Homer first mentioned a blood‑filled sausage in 800 BC - the earliest written reference to what would become the world’s oldest sausage. Over time, the idea travelled across Europe, evolving with each region it passed through. When it reached Lancashire, it found a community that embraced it wholeheartedly, shaping it into a local masterpiece.

Black pudding itself is made using simple, honest ingredients: fresh blood, fat, onions, oats or barley, all gently seasoned and cooked until firm. This thrifty method (using every part of the animal) suited Lancashire perfectly.

Today, that legacy is carried forward by Debbie Pierce, the Queen of Black Puddings. Starting as a Saturday girl on Bury Market, she learned the trade with true Lancashire grit and went on to found The Bury Black Pudding Company. Under her leadership, a humble local favourite has become a national success, ensuring that Bury’s proud tradition continues to sizzle for generations to come.
